Ingredients:
- 1 large sweet potato, scrubbed
- 3/4 cup chopped kale
- 1 cup canned black beans, rinced
- 1/4 cup hummus
- 2 tablespoon water
Directions:
Step 1
Prick sweet potato all over with a fork. Mcrowave on high until cooked through 7-10 minutes.
Meanwhile, wash kale and drain, allowing to the leaves. Place in a medium saucepan; cover and cook over medium-high heat, stirring once or more, until wilted. Add beans, a tsp or 2 of water if the pot is dry. Continue cooking, leave it uncovered and stir occasionally until the mixture is steaming hot (1-2 minutes).
STEP 2
Split the sweat potato open and top with the kale and the bean mixture. Add hummus with 2 tsp of water in a small dish. Add again water until your desired consistency. Drizzle the hummus dresing over the stuffed sweet potato.
